Introduction Food is defined as anything solid or liquid which when swallowed, digested and assimilated and nourishes the body. Food science is a systematic study of the nature of food materials and the scientific principles underlying their modification, preservation and spoilage. It is a discipline in which the biological and physical sciences and engineering are used to study the nature of foods, the causes of their deterioration, and the principles underlying food processing.
